Thai Ginger opened its first kitchen in Factoria in 1996. The mission was simple: serve the Thai food our family had been cooking back home. Not the version adapted for Western palates — the real one. The spices, the heat, the techniques our parents and grandparents carried over with them.

That meant cooking the slow way. Aromatics minced through the day. Sauces tasted and balanced batch by batch. Ingredients fresh in, finished in the wok within hours. And no MSG in anything we serve — not as a gimmick, just as the standard our family has always cooked to.

Three decades on, we run two kitchens — the original Factoria spot and our Redmond location. Same family in the back, same recipes from 1996, same care. Come in and you’ll get the closest thing to Thailand we know how to put on a plate.
